Down a Tsukiji side street, past the noren, the sounds of the kitchen. Takeno is a small diner that opened here in 1938. Morning meals for market workers, lunch for visitors, evening bowls for craftsmen off the clock. The same room has held all of them.
The lights stay on from noon through night. One customer eats rice while the next pours hot sake. That is the ordinary way of this place. The fish comes from the market out front and from Toyosu. The simmered fish is prepped in the morning, and each order gets its own broth. Nothing complicated about it.
Four generations, still run by the family. The sign is worn, the chairs are worn. Only the taste is made fresh each day.

四 / anago shiroyaki
Salt only. Skin crisp, flesh left plump. A dish for the evening, alongside wasabi, sudachi, and a bottle of sake.
