Down a Tsukiji side street, past the noren, the sounds of the kitchen. Takeno is a small diner that opened here in 1938. Morning meals for market workers, lunch for visitors, evening bowls for craftsmen off the clock. The same room has held all of them.

The lights stay on from noon through night. One customer eats rice while the next pours hot sake. That is the ordinary way of this place. The fish comes from the market out front and from Toyosu. The simmered fish is prepped in the morning, and each order gets its own broth. Nothing complicated about it.

Four generations, still run by the family. The sign is worn, the chairs are worn. Only the taste is made fresh each day.

/ maguro butsugiri teishoku

The morning's hon-maguro arrives from Toyosu, cut into rough cubes. The scent of soy, the warmth of the rice. By noon, most customers order this.

/ nizakana

Simmered slow in sweet-salty soy, all the way to the bone. A dish built from nothing but the sound of fat rendering and the rising steam. The day's fish, whatever the market brings.

/ sashi-mori teishoku

White fish, lean red, shellfish, silver-skinned. This morning at the market, all on one plate. No hesitation in the way it is set.

/ anago shiroyaki

Salt only. Skin crisp, flesh left plump. A dish for the evening, alongside wasabi, sudachi, and a bottle of sake.

Simmered at dawn

Today's simmered fish, just before the flame comes down.

時 価

The fish follows the sea, day to day. Takeno posts no fixed prices. If something catches your eye, ask at the counter each time. We bring out what came in best, in order.
